Special Recipe from ‘Chef’ Daryl – Cast Iron Cooking

Chili:

Soak dry beans the night before – one bag of kidney and one bag of great northern

Drain and rinse beans in clean water then cover in water and boil until tender, drain set aside

In cast iron pan, brown 1-2 lbs hamburger with chopped onion

add 2 large cans whole tomatoes

2 large cans tomato sauce

add beans

 

Season with 1/4 C chili powder

garlic powder to taste

1Tbs crushed red pepper

2 Tbs paprika

dash of cinnamon

 

Bring all ingredients to a simmer for 45 minutes

 

Preheat oven to 350 degrees.

Mix up your favorite corn bread or biscuit mix and pour over top of chili in the cast iron pan.

Bake in the oven until golden brown. – about 35-40 minutes

 

Remove from oven and serve

 

 

 

Cobbler Dessert -

 

Preheat oven to 350 degrees

 

In your cast iron skillet add 2 large cans of sliced peaches in heavy syrup

sprinkle a white cake mix evenly over the top

add several slices of butter on top

 

Bake in oven for about 45-50 minutes

 

Serve with your favorite whipped topping or ice cream.
