ANDRE’S SPINACH SALAD

  • Washed raw spinach
  • Bacon, cooked and crumbled
  • Sliced avocado
  • Cherry tomatoes
  • Small pitted ripe olives
  • Onion, chopped
  • Sunflower seeds
  • Hard-boiled eggs, sliced
  • (Cucumber, peas, chickpeas, celery, or raisins, optional)

Dressing – Whisk together:

  • 1/2 cup honey
  • 1/2 cup vinegar
  • 1/3 cup vegetable oil
  • 1 teaspoon yellow mustard or spicy brown mustard
  • 1 teaspoon lemon juice
  • And 2 strips cooked crumbled bacon.

WHEAT GERM MUFFINS

  • 1 egg, well beaten
  • 1/3 cup raw sugar or brown sugar
  • 1-1/4 cups milk
  • 1/3 cup melted butter
  • 1 cup whole wheat flour
  • ½ teaspoon salt
  • 4 t. baking powder
  • And 1 cup wheat germ

Preheat the oven to 425. Beat together the egg, sugar, milk and butter. Sift together the flour, salt, and baking powder and mix into the egg mixture. Stir in wheat germ lightly. Fill muffin cups 2/3 full and bake 20 minutes until done. This makes about 16 muffins.

SIX-LAYER DINNER

  • 2 cups finely shredded carrots
  • 1 green pepper, chopped
  • Salt and pepper to taste
  • 2 cups sliced raw potatoes
  • 1/2 cup brown rice
  • 1 cup sliced onions
  • 1-1/2 lbs. ground beef round
  • 1/3 cup wheat germ
  • 1 quart tomato juice

Preheat the oven to 325. If desired, brown ground beef slightly to drain any extra fat.

Combine the carrots and green pepper. Seasoning each layer, place potatoes in the bottom of a greased casserole, sprinkle with rice and then add layers of onions, beef, the carrot/green pepper mixture, and the wheat germ.

Pour the tomato juice over all; cover tightly and bake 1-1/2 hours. This makes 6-8 servings.
